Bacon Wrapped Chicken Kabobs

I’ve been told summer is on the way…. in an effort to help my favourite season make an appearance, we’ve started up the BBQ.  Yesterday I threw a dinner party for 10, I was hoping it would be nice enough for all of us to enjoy the patio, but unfortunately, the weather didn’t cooperate.  But, I didn’t let that get me down, because I had an amazing plan for supper – Bacon Wrapped Chicken Kabobs.  I thought this was my own creation until I did a bit of research online and it turns out there are other brilliant people online as well.

Bacon Wrapped Chicken Kabobs1

Here’s what you need:

  • Chicken thighs – cubed
  • Peppers – cut into squares
  • Onions – cut into squares
  • Kabob skewer
  • Bacon

Chicken Marinade:

  • 1/2 cup soya sauce
  • 1/2 cup apple cider vinegar
  • 4 tablespoons honey
  • 4 table spoons vegetable oil

Mix the marinade, dump the chicken in, cover and put in the fridge for at least and hour.  While your chicken is marinating, this is a great time to cut your veggies.  After an hour, take each piece of chicken and wrap it in bacon.  (We had more chicken than bacon so some chicken pieces were baconless. Build your kabob as you would like, (we put 4 pieces of chicken on each skewer).

Put on the BBQ for about 20 minutes each and serve.  We paired it up with a Caesar salad and corn on the cob and it made for a very summery dinner.

We had about 35 skewers and I only had 1 left by the end of supper – I think it was fair to say these were a hit!

TIP: To avoid burning the skewers soak them in water first.

Any marinade would work, heck you could just slather on BBQ sauce and I’m sure they would be just as yummy.  I’m so glad that summer is on the way, I love BBQing and experimenting!

  1. I use to BBQ all year round until the know-it-all BBQ assassin I married murdered my BBQ, I am considering pressing charges 😛 I hope to get back to my grilling ways soon 🙂

  2. my husband does the bbq-ing around here, and we try to bbq every weekend. its not unusual for us to bbq if we are having steak even if we have 2 feet of snow.

  5. I BBQ all year long….even when I have to shovel to get to it! Thankfully we bought a new BBQ last year (natural gas) so I don’t have to worry about filling up the propane tank! 🙂
