Raspberry Shortcake Recipe

by Mommy on February 6, 2013

Valentine’s Day is just around the corner and what better way to show someone you love them to make a special dessert?  As you all know, I have no talent in the kitchen, so here I am with another easy and absolutely delicious dish that anyone (yes, anyone – even you) can make.

It’s called Raspberry Shortcake.

Raspberry Shortcake

What you will need:

  • Frozen or fresh Raspberries
  • Pound cake
  • Whipped Cream
  • Sugar

Looks easy enough so far doesn’t it?  I’d love to say I made the pound cake from scratch, but I didn’t – I bought it!

Here’s what you do:

Crush the raspberries with a masher until they are all runny.  If they are too tart, add sugar to taste.  Slice the pound cake and toast it! Yes, that is the secret here – put the pound cake into a toaster.   Add the raspberries onto the toasted pound cake and top with whipped cream.   It’s that simple but it will taste like you were slaving in the kitchen all day.  I’m a chocolate lover, but this is probably one of my favourite desserts.

If Raspberry isn’t your thing, you can use strawberry, blueberry or even chocolate sauce.   Use your imagination, just toast the pound cake and you’re good to go!

I love Strawberry Shortcake but the one we make is so time consuming, we never make it. This looks a lot quicker and equally delicious. Thank-you!
