It’s hard to believe it’s August 26th already. With this amazing wether we’ve been having it seems that summer is going to last forever and there would be no complaints from me. The summer has been so amazing we actually haven’t even had enough rain for some of our crops. Blueberries, raspberries and blackberries usually take over the backlands and ditches of Nova Scotia in the summer months. Years past, we’ve been able to fill buckets and pails of wild berries, but this year it’s been pretty scarce.
I absolutely love blueberries, snacking on them, in muffins, on cereal or any other way they can be eaten. They are a kind of super fruit that is excellent for your body in many ways. I was on the hunt for a way to incorporate my favourite local berries into a dinner meal and found something on chicken.ca that fit the menu. I was hoping for something very local/Canadian and came across this Blueberry Pecan Glazed Chicken recipe with maple syrup recipe – perfect for this time of year. And you can’t get more Canadian than Maple Syrup (other than having beaver or Moose…. which isn’t exactly appetizing)
Here’s the recipe:
- 4 bone-in, skinless chicken breasts (I used boneless)
- 1 Tbsp onion(s), diced
- 1/4 tsp garlic, minced
- 1 Tbsp butter
- 1 1/2cups blueberries
- 1 Tbsp maple syrup
- 1 Tbsp pecans, chopped
- 1/4 tsp apple cider vinegar
- salt, pinch
- pepper, pinch
I am not much of a cook and if I can’t pronounce any of the ingredients I won’t even attempt to make it. Surprisingly, I actually had everything other than pecans and blueberries on hand.
This was a very easy meal to make, and it was very very tasty. The light crunch of the pecans really added to the texture and I was very impressed as to how much sauce the recipe made. The recipe itself doesn’t call for anything that will make much of a sauce, but the full blueberries “melt” into a sauce and then thicken up.

Hubster “pickey eater” even enjoyed the sauce, which is a surprise for something new, it does have a nice sweet taste to it, that must have done it. Unfortunately, I couldn’t get Princess I take after my Dad (pickey eater) to even try it. But what else is new?

For a quick, easy and yummy summer meal, I highly recommend the Blueberry Pecan Glazed Chicken. And while you’re at it, eat it on the patio (we did) who knows how many more days we will have like this.

Looks delicious! I have a Mr Picky Eater Jr in my home as well, in some ways he is better than his dad (likes most fruit and veg) but in other ways he’s harder to please (does not like sauces/seasonings to the point that he won’t even eat a HOT DOG if it has a dark spot on it from BBQ’ing because he thinks it might be a spice. Steamed hot dogs in our house on the rare occasions that we have them. *sigh*). This, if I omit the pecans (or perhaps just put them all on MY plate) might actually work, as everyone loves blueberries!
The pecans add texture, you can’t see them at all.
I bet Mr Picky Eater will eat anything with Ketchup!
