A Perfect Day For…

This summer has been absolutely crazy.  Between moving, being sick, our house always full with different family and friends, trips and Birthday parties… there’s been very little time for my little family and I to enjoy ourselves.  So today, we made a point to go out, just the 3 of us for a picnic.

I love taking off for a day trip packing a lunch with us to enjoy somewhere along the way.   For our lunch, we brought:

  • Chicken Club Twister (made with left over chicken and complete with bacon bits – yum)
  • Strawberries
  • Raspberries
  • Cheese
  • Crackers
  • Juice

As we headed out for a nice drive along the coast line, the clouds started to roll in, and slowly little droplets of rain began to fall, but it didn’t stop my family and I from spending some time at Cleveland Beach.  It’s a beach heading towards Hubbards close to the famous Queensland Beach, but a little more quiet, and the sand is nearly white.  We enjoyed our lunch, played in the sand and didn’t let the weather scare us away…. until it started falling harder and harder and harder.  We eventually took cover, as did the rest of the beach goers.

 

I love packing a picnic lunch, heading out with no real destination and just landing wherever the day takes us.  It’s a great way to spend a Sunday and I hope we will be able to spend a few more Sunday’s like this, this summer.  Although August looks like it’s going to be more busy than July.

If you’re looking for an easy and yummy Chicken Sandwich here’s the recipe for the Twister:

  • 3 strips chicken breasts, grilled
  • 1/2 whole wheat pita
  • barbecue sauce
  • light mayonnaise / low-fat salad dressing
  • simulated bacon bits
  • Romaine lettuce
  • tomato(es), small, sliced
I mixed all the incidents together and put it into a pita.  It was easy to make (very important for me) and yummy too!

OH what a fun day! We haven’t had a fun family outing like that for a long time. Maybe after we move and settle in we will. That chicken looks really yummy too!

It’s so important to do it as a family. It was way too long for us… and yes.. they were yummy.
