Celebrate Gung Hay Fat Choy with VH – Closed

Gung Hay Fat Choy – For those of you who don’t speak Chinese, that means Happy New Year, for those of you who who speak Chinese, I’m sorry about my terrible accent!

With Chinese New Year starting on January 23rd this year, my family and I have been getting ready to celebrate with a home made Ethnic dish with a little help from VH.  All right, a lot of help from VH.  Next to chocolate, Chinese food is my favourite dish, so this was a delightful task.

When it comes to dinner time, I lack creativity (and ability). Thanks to the VH Facebook page, there were some extremely easy oriental dinners to make.  I chose the Mandarin Chicken and Broccoli.  Cooking with a citrus fruit isn’t something I have ever done before, but it seemed like an easy recipe.  And sure enough, it was.

Ingredients:

  • PAM® Original Cooking Spray
  • 4 boneless chicken breasts (about 1 1/2 lbs/675 g), whole or cut into strips
  • 1 clove garlic, minced
  • 6 cups (1.5 L) small broccoli florets (fresh or frozen)
  • 1 (355 mL) bottle VH® Asian 5 Spice Stir-Fry Sauce
  • 2 (284 mL) cans whole mandarin orange segments, including liquid

Shopping was a breeze, and the entire meal probably cost about $2o (with a lunch or two left over in the fridge).  Dinner took about 30 minutes to prepare (online it says 25 minutes), cooking the chicken was the longest part of the process.  The VH Asian 5 Spice Stir Fry made the meal extremely yummy and the mandarin oranges were prefect. I was expecting them to be too sweet or sour and really, they were neither – just added some juiciness.  My Mom found the sauce a bit spicy, I on the other hand did not.  I like spicy things – like Caesars.

 

Chinese New Year lasts a full 15 days, so you have time to get some cultural meals in with your family.  Check out the VH Facebook page for suggestions. The recipes are all fairly simple and all look delicious.  (I need to learn to take pictures of food).

Yum, this looks so good, Lynette! I LOVE mandarin oranges in recipes; I’m not big on cooking with citrus except for that. And that sauce looks amazing! :)
