Sweet and White Potato Mash Ingredients:

  • 1 White potato, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 clove of garlic, minced
  • 1oz  unsalted butter or olive oil
  • ¼ cup milk – use breast milk or formula
  • 2oz  grated mild Cheddar cheeseMethod

Instructions: Pre-heat your oven to 350° F.  Put the white and sheet potatoes into a saucepan and cover with water. Bring to a boil then cook for around 20 minutes, uncovered, until tender. Drain the potatoes, and then place them in a bowl and mash with garlic, butter and milk. Place in a baking dish and top with the cheese. Bake for around 30 minutes, until nice and brown.

Quinoa Pancakes Ingredients:

  • ½ cup (125ml) PC Organics Quinoa
  • ½ cup (125ml) PC Organics Whole Wheat Flour
  • 2 tsp. (10ml)  Baking Soda
  • 2 PC Blue Menu Omega-3 Eggs – Large
  • 1 cup (250ml) Milk
  • ¼ cup (50ml) Melted butter
  • 2 tbsp. (25ml)  PC 100% Pure Maple Syrup

Instructions: In a small saucepan, bring 1 cup (250ml) of water to a boil.  Add the quinoa. Reduce heat to low, cover and simmer 15 minutes. Remove from Heat and let stand 5 minutes. Fluff with a fork and allow to cool. In a bowl, combine the flour, baking soda, cooled quinoa, eggs, milk, butter, and maple syrup; stir together until smooth. Spray a large nonstick frying pan with cooking spray and heat it to medium-high heat. Cook the pancakes one at a time, using ¼ cup (50ml) of batter for each. Cook 2 minutes or until the surface starts to bubble and the sides turn golden. Turn over and cook two more minutes. Serve with additional maple syrup or with PC Twice the Fruit spreads.

For those of you who attend the sessions, you will receive HUGGIES coupons and a free pair of Tiger ears – just in time for Halloween!

  2. I love making pasta. In particular I love a Creamy Garlic Bacon Penne dish that smothers the penne in a rich white sauce with garlic, onions and bacon.

  3. When they were babies my two sons loved steamed frozen corn. Even after blending, it stayed a little chunky but they were enjoying the sweet taste.

  6. My favourite is pasta! I love any kind of pasta and with Halloween coming, pumpkin soup tastes really good as well!

  7. my favourite baby food is blueberry/peach/pear puree. Cook 1 c blueberries with 1-2 peaches, and 1-2 pears on medium heat 15 minutes. Throw in the blender and puree. Viola, a tasty little snack.

  9. My little guy is the most PICKIEST eater in the world. It’s so hard to get him to eat anything good. His favourite supper is whole wheat spaghetti with marinara sauce (real parm cheese grated on top).

  10. Quinoa Pancakes sound good. And our favorite at home is shepherds pie

  11. I love making banana pancakes from scratch. They always come out so sweet that we don’t even need syrup for them!

  12. My favourite baby food to make is squash. It’s so easy & one squash makes many servings to freeze for using at a later date.

  13. I’ve been blessed with 2 girls (2 & 5) that will just about anything! My favourite thing to feed them when they were babies (one of their first foods) was grilled eggplant & zucchini. They still love it!
